Buffalo Chicken Dip

buffalo chicken dipThis Buffalo Chicken Dip should probably be categorized as an illegal substance. While in general, I plan to share mostly my personal recipes, I can’t take credit for this one. Nor can I ignore it if I’m responsibly posting a Super Bowl Party menu. I mean, this Buffalo Chicken Dip is really, really good. My childhood friend Sherrie shared it with me several years ago and I probably wouldn’t have bothered with it if she hadn’t served it first. I’m not really a prepared food person. Or a dip person. And I try really hard not to be a junk food person. But this recipe is all of those things and more. So Sherrie, this one’s for you. And Frank’s Red Hot Sauce, for thinking of this. Or copying it from someone else and marketing it. For a large group, you might want to double it. And the leftover Buffalo Chicken Dip makes a great base for a phenomenal pizza.

Buffalo Chicken Dip

Buffalo Chicken Dip complete with blue cheese, hot sauce and served with carrots and celery is the most tasty tailgate dip EVER.

Ingredients

  • 8 oz cream cheese softened
  • ½ cup blue cheese salad dressing I like the Marizetti's brand that has blue cheese chunks in it**
  • ½ cup hot sauce I've always used Franks since the recipe comes from them, but I'm sure others work
  • ½ cup shredded mozzarella cheese
  • 1 ounce blue cheese; crumbled optional
  • 2 cups shredded roast chicken breast*

Instructions

  • Preheat oven to 350° F.
  • Place cream cheese into a deep baking dish or pot. Mix in dressing, hot sauce, cheese and chicken. buffalo chicken dip raw ingredientsBake 20 minutes or until mixture is heated through; stir (You can also make it on the stove top, but you need to stir regularly).buffalo chicken dip in pot
  • Serve with fritos, tostitos scoops and celery and carrot sticks.buffalo chicken dip aerialNotes: You may want to make a double batch for a large group. And if there's leftovers, I freeze it in little ramekins. Then I can bake just enough for two people and since the rest is in the freezer, we're not tempted to keep going. Portion control junk food, a la Rebekah's portion control nachos. She makes 7 perfect nachos at a time. So smart.

Notes

*Hopefully you reserved some when you roasted a chicken for soup- if not... look at the Feel Better Chicken Noodle Soup for advice on roasting your own. Or make the speedy version by buying a rotisserie chicken at the grocery store.
** Not into blue cheese? Use ranch dressing instead of blue and parmesan instead of blue. It's milder, but still really good.
