Lemongrass Ginger Iced Tea

 Lemongrass Ginger Iced Tea with lemons My friend Luke makes this really delicious Lemongrass Ginger Iced Tea that I have been meaning to share with you for some time. My English Polo Picnic Menu finally seemed like just the occasion for the Lemongrass Ginger Iced Tea since it goes perfectly with the rest of the menu. The lemongrass and ginger make for a spicy, citrus-y edge to an iced tea that ends up very refreshing and full of flavor. While any black tea will work, I selected Lady Grey, which has a subtle citrus note to it, which I thought enhanced the lemongrass flavors perfectly. This Lemongrass Ginger Iced Tea is so special, that it’s worthy of pulling out the sterling silver iced tea spoons and setting a fancy tea tray. But it tastes just as delicious straight out of a mason jar that you can pack up and take with you on picnics and down the shore all Summer long. I love special recipes from friends and family, because at least for me, they trigger all the lovely memories of great meals and good times whenever you create them. I think of Luke and our many fun cooking projects every time I make this Lemongrass Ginger Iced Tea, which in the heat of the Summer and picnic season can be quite often.

Lemongrass and Ginger Iced Tea

Lemongrass Ginger Iced Tea is a delicious sweetened ice tea bursting with lemongrass and ginger flavors for a refreshing, spicy and citrus-y iced tea.

Ingredients

  • 4-6 Stalks of Lemongrass; tender parts sliced*
  • 4 inches ginger; peeled and sliced
  • ¾  cup sugar
  • 10 black tea bags Lady Grey if you like
  • lots of ice!

Instructions

  • Bring lemongrass and ginger to a boil in 6 cups of water.
  • Let simmer 15 minutes.
  • Add sugar and stir until it dissolves (the order isn't important here, sometimes I throw it all in together). Lemongrass Ginger Iced Tea simple syrup
  • Let sit another 10 minutes.
  • Add tea bags to 4 cups boiling water. Let steep 10 minutes.
  • Strain out lemongrass and ginger and combine with tea concentrate in a pitcher. Serve with lots of ice and lemon slices if you like. Lemongrass Ginger Iced Tea

Notes

*More if not very fresh. The flavor really depends on how fresh the lemongrass is. If it isn't too fresh I might use 8 or 10 stalks.
** Luke adapted this recipe because he felt it was a fair bit of work and he wanted more quantity. I took it a step further and made 2 cups of simple syrup and then just added about ¾ cup of the syrup to about 9 cups of tea. This way I had enough of the syrup to make the tea three times. Delicious simple syrup is never a bad thing to have around. That said, I wanted you to have his original recipe, because he's worked on it for a long time to perfect it.
