My brother likes to make ham, and over the years, he’s introduced me to coca cola glazes, pineapple glazes, coffee glazes, and a few more I can’t recall at the moment. For some reason he was often in charge of Easter. One thing I’ve learned about ham over the years (mostly from my brother Ivan) is that no matter what you do to prep it, it pretty much just tastes like ham, which is a good thing, since ham is so delicious. That said, it’s fun to try new glazes and preps and this year, I recommend this Sweet and Spicy Jalapeño Glazed Baked Ham as the main dish for Easter Brunch. There’s a hint of spice and lots of sweet. But the very best reason to make this Sweet and Spicy Jalapeño Glazed Baked Ham is that it pairs really nicely with the poblano potato gratin. Trust me, you want to have an excuse to make the gratin. Because it’s amazing. Also, while I just told you that you can’t really mess up ham… full disclosure… that’s only true if you start off with a good ham. In fact, make sure you buy the best ham you can find since that’s really the star in the Sweet and Spicy Jalapeño Glazed Baked Ham.

Sweet and Spicy Jalapeño Glazed Baked Ham

Sweet and Spicy Jalapeño Glazed Baked Ham is a fun and creative take on a classic Easter dish that is perfect paired with my poblano potato gratin.

Ingredients

  • 7- pound bone-in, spiral ham (or bigger- I’ve got some great leftover ideas for you)
  • 1 cup chicken stock or low-sodium broth
  • 1 cup strawberry or any red fruit jam- just think about if you want seeds or not
  • ½ cup pomegranate molasses or reduce 2 cups pomegranate juice down to ½ cup
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 2- inch piece ginger; peeled
  • 3 whole jalapeños

Instructions

  • Preheat the oven to 325° F.
  • Place the ham in a large roasting pan and add the chicken stock.
  • In a food processor, add jalapeños, jam, pomegranate molasses, cinnamon, ginger and lemon juice. Baked Ham with Sweet and Spicy Jalapeno Glaze making glaze
  • Process until it’s smooth.
  • Drizzle half of the glaze over the ham. Baked Ham with Sweet and Spicy Jalapeno Glazed
  • Cover with foil. Roast for 1 ½ hours, basting frequently, until a thermometer inserted in the thickest part of the ham registers 125° F.
  • Remove the foil and brush the ham with remaining glaze.
  • Roast for 30 minutes longer, until the top is lightly caramelized.
