Ingredients

  • ¼ cup granulated sugar
  • 4-6 basil leaves
  • 2-4 grapefruits any work; I used ruby red

Instructions

  • Place the basil and sugar in a mortar and pestle. Basil Bruleed Grapefruit basil and sugar
  • Mash the basil and sugar together in a mortar and pestle (or a bowl with a spoon) until you have a green sugar and only very small bits of basil leaves. Basil Bruleed Grapefruit basil sugar
  • Cut the grapefruits in half. [You can segment them ahead of time to make it easier for guests to enjoy.]

  • Broil or use a kitchen torch and heat until the sugar melts and a hard crust forms.
