Ingredients

loaf cocktail rye bread
1
stick lightly salted or salted butter; softened to room temperature
fresh mint leaves
watermelon radishes
any variety is fine, but the watermelon variety is gorgeous
Instructions
Either mince ΒΌ cup packed mint leaves and whisk into 1 stick butter or combine them in the food processor.
Either with a slicing disk in your food processor, with a mandoline, or by hand, very finely slice your radishes.
Butter the rye bread with the mint butter. Layer radishes on the butter.
Cover with another piece of buttered bread. Cut into a triangle. Stack and Serve.
